Red Radish  Pickled

Some red radish, some sea salt, 2-3 ume su (umeboshi vinegar)  

Wash the the radish and cut it into small pieces. Mix it with the salt, very, very  well. Place it in a pickle presser (if you do not have one, use a bowl put a plate and a stone on the plate) Leave it for at least 30’. Remove the water, add the ume su mix well and serve (do not use any oil!)
